Hatahata-zushiJapanese sushi is usually thought of as raw fish on a ball of rice. However, there are actually many different types of sushi in Japan. Hatahata-zushi, or hatahata sushi, is a kind of fermented sushi made with boiled rice. Iizushi means rice sushi fermented for a long time-- from one to several months.
